meNicole Arciello, a 10-year vegan, has a certification in Plant Based Nutrition from eCornell.  A self-taught home cook, she studied with professional cooks through the years and became a professional herself when she ran her own vegan bakery and catering business in Albany, NY.

She has had original recipes published in the Daily Gazette and has created menu items for Little Anthony’s Pizzeria in Albany, NY.

She has taught numerous continuing education classes and also teaches when she can at local libraries to give back to the community.

“I love sharing my knowledge and skills and most importantly my passion for great vegan food with my students!  My goal is for each student to walk away confident and ready for their vegan lifestyle.  A vegan lifestyle is sustainable and attainable. Vegan cooking can change the world!”
